Have you ever heard that beans are a nutritional powerhouse? We are told a variety of beans have a wide array of vitamins, minerals, protein, and fiber. They are particularly rich in B vitamins, iron, magnesium, and zinc. Different varieties of beans, like kidney beans, navy beans, and pinto beans, have unique nutritional profiles, but they all contribute to a healthy diet.
We at the mission house have taken our beans seriously and planted multiple varieties of beans at the little plot of land we farm near the mission house. Last week we harvested our bountiful crop of beans. We in fact picked and bagged 4 bags weighing approximately 25 kg (55 lbs) each. Trust us that’s a lot of beans. To insure beans that are easier to cook, we needed to harvest them while they are a bit soft and not too dried out. It was a good time had by all as we worked together to harvest the crop.






When we were able to pick all the beans and bag them, we brought them back to the mission house. Now the fun part to shell, (remove the beans from the pods) all these beans. Monday night we shelled and also cooked some to enjoy for our evening meal. Tuesday and Wednesday we shelled more and still have some more to go. This crop is such a blessing as it provides some wholesome food for us at the mission house. Typically right now we are cooking beans to eat for lunch and dinner.
